For some reason the rear brake reservoir on my bike is completely empty. I don't often use the rear brake so was wondering what I should look for to see what caused it?

Look at the connection points of the lines (on the master cylinder itself, at the brake lever assembly and then the caliper). You should see something wet. Be advised, brake fluid is caustic and removes paint and clearcoats rather quickly.
